Serves 4 
- 4 cups water
- ½ cup dried hibiscus flowers
- ¾ cup sugar
- 1 cup freshly squeezed lemon juice (5 to 6 lemons)
- 1 packed cup fresh mint leaves, slightly bruised + more for garnish
- 4 cups ice cubes, additional for serving

In a saucepan, bring 4 cups water to a boil. Remove from heat, add the dried hibiscus flowers, and steep for 15 to 20 minutes. Strain out the flowers, and sweeten with sugar while still warm, stirring until sugar dissolves. Stir in fresh lemon juice and add mint leaves. Let sit for 15 minutes, then add ice cubes to chill. Store in refrigerator for at least 1 hour to meld the flavors prior to serving. Optionally, serve over ice with fresh mint and lemon slices for garnish.
